Corn and Oil

Corn and Oil - This drink sounds like it might be from Oklahoma…but it’s not. This is a Bajan (People from Barbados) standard. Traditionally served with only crushed ice. So, I suggest ONLY Barbados rum and John D. Taylor’s Velvet Falernum (another Barbados staple). This drink is simple and straightforward, but…The Sagacity Rum from Foursquare (owned by the same folks that make the JDT Velvet Falernum) is anything but simple. Sagacity [ suh-gas-i-tee ] a noun, means: “acuteness of mental discernment and soundness of judgment. Or . Also meaning: If you are drinking this rum you are fornuate indeed! This is the 11th or Mark XI Exceptional Cask Selection from Foursquare (R.L. Seale & Co.). As per usual it starts its aging in a ex-bourbon barrels for 12 years, and another in ex-madeira barrels for 12 years. Blended from both Pot Stills and Twin Column Stills and bottled in 2019. Proofed to a perfect 48% ABV (96 Proof). At this ABV, you can really taste the expressions that the master blender intended. Sagacity reveals a real fruity sweetness. Bright red berries and some blackcurrants. It’s very fragrant and slightly floral on the nose. Further nosing reveals toasted coconut, a very slightly smokiness and a complex array of rich warming oak spices.

To present this great concoction, I decided to be extremely literal to its name. I started with Jiffy Cornbread mix (duh!) and made some Smoked Gouda & Roasted Green Chili Corn Muffins. And for the “Oil”, I employed an actual gas pump. I hope you enjoy!

Add all the ingredients to a Double Old Fashioned Glass and fill with crushed ice. Stir to combine until frost forms on the outside of the glass. I preferred to garnish with a dehydrated lime wheel. Enjoy!
