Lei Lani Volcano 2.0 or Lei Lani Nouveau - Created for Walt Disney Family Museum Tiki Oasis Party by Smuggler’s Cove in 2013. “The happiest place on Earth” was graced with this updated recipe of coconut cream, blended aged rum, and uses Bundaberg Guava Soda in place of Guava Nectar for more sparkle. The original was inspired by the Lei Lani Volcano in Disney World in the 1970’s and was first published in Beachbum Berry Remixed.
This fanciful glass lends some levity to a drink that would ordinarily go in a collins or highball glass. An “Upside down” quality if you will.
Bundaberg Guava Soda (bought it at World Market)
Pineapple Juice
Fresh Lime Juice
Homemade Coconut Cream
Plantation Fiji Rum
In a shaker of cracked ice add the first four ingredients, shake vigorously. Pour the Soda in the glass filled with cracked ice, then topped with the strained shaker contents. Garnish with an edible orchid. Enjoy!
