Hotel Nacional Special

Hotel Nacional Special - This Prohibition throwback was originally documented in the The Gentlemen’s Companion. This version is curated by the folks at Smuggler’s Cove. Named after the Havana bar that played host to a notorious set of celebrities back in its heyday, the Hotel Nacional cocktail combines rum, fresh juice and apricot liqueur. Light rum makes up the base in the original recipe, which Charles H. Baker updated to gold rum in The Gentleman's Companion. I used the excellent, lightly aged Plantation Fiji and the sublime Abricot du Roussillon by Giffard for this version. Enjoy!

In a cocktail shaker, muddle the pineapple chunks with the lime juice and syrup. Add the Apricot Liqueur and the rum, then fill with cracked ice. Shake and double strain into your favorite fancy coupe. Salut!
