Daisy de Santiago - Charles H. Baker Jr. penned “The Gentleman’s Companion in 1946 ( a HUGE year for cocktail books as the Original Trader Vic’s Food & Drinks Book was published in the same year,) and one the more enduring recipe for this take on a classic Daiquiri. While the actual Daisy herself was never truly identified, the City of Santiago in Cuba probably had a few at the time. Charles Baker was a contemporary of Ernest Hemingway and a friend. So, one could imagine a gathering of these two gents….sharing stories of the aforementioned Daisy during the peak of the Prohibition.
Add the following ingredients to a cocktail shaker full of ice:
1 oz Fresh Lime Juice
1 1/2 Teaspoons of Demerara Syrup
1 oz Seltzer Water
1/2 oz Yellow Chartreuse
1 1/2 Papa’s Pilar Blonde Rum - 7 Year Solera
Shake vigorously and strain into an Old-Fashioned Glass full of crushed ice.
Garnish with sprig of Fresh Mint
Enjoy!
