Cuevas - Dane Barca from Smuggler’s Cove came up with this stunning cocktail as an homage to Panamanian roots as he was doing an event for Abuelo Rum from Panama. It is called Cuevas in honor of the “Cueva”, the indigenous people from Panama. Unfortunately the Spanish destroyed them by the usual means; disease, subjugation and outright murder. Incidentally, Abuelo in Spanish means “Granddad”. I had the pleasure of visiting Panama a few years ago and had the pleasure of quite a few different versions of this absolutely superior rum. This cocktail has some of the most complex and unique flavors of anything I have made. The Punt e Nes is an Aperitivo that really sets this drink apart. The story goes that on 19 April 1870 , a stockbroker, caught up in a discussion with colleagues whilst in the Carpano wine shop about the increase in share prices on that day – one and a half points – ordered his usual Carpano vermouth but asked for the barman to add half a measure of bitter, using the regional expression “Punt e Mes”. The drink immediately became popular as an aperitif before lunch, as recalled by the barman of the time Maurizio Boeris. The Bittermens Elemakule Tiki bitters along with The Sandeman Tawny Port round out this extraordinary creation. Thanks Dane!
