Abricot Vieux

The feature ingredient is a singular experience in the Rhum world. Clément 10 year old Rhum Agricole has been distilled from fresh pressed sugarcane juice and aged a minimum of 10 years in a combination of virgin and re-charred oak barrels, yielding an exceptional aged Agricole Rhum with unique characteristics of cinnamon and vanilla. The oak is certainly a very forward expression in this rhum. Incidentally “Rhum” is the French spelling of the English Rum. This Rhum from Martinique meets the very strict guidelines of Appellation d’Origine Contrôlée of Martinique. Appellation d'Origine Contrôlée (AOC) is the French equivalent to EU's Protected Designation of Origin (PDO).

The nose reveals aromatic intensity of raw wood, dried spice and toasted fruit, leading to warm bakery flavors that carry through to an unimaginably lengthy finish. Clément 10 year old Rhum Agricole is a limited release of select barrels chosen and kept aside by their Cellar Master for further aging to develop an unparalleled distinguished character, while following the time-honored traditions of Homere Clément, and is certified under the Appellation d’Origine Contrôlée of Martinique.

Martinique has long had the reputation of having the best terroir for sugarcane cultivation, long before Homère Clément had the imaginative idea to press sugarcane to produce Rhum Agricole. Domaine de l’Acajou was purchased in 1887 at the peak of the sugar crisis. The introduction of sugar beets and the increasing availability of cheap South American sugar lead to the collapse of the Martiniquean sugar commerce.

You take all that goodness, grab a crystal mixing glass of cubed ice and add:
