Kiss of the Oceans - Papa’s Pilar Blonde

Kiss of the Oceans - Made with Papa’s Pilar Blonde 7 year Solera Rum from Key West. That amazing rum is augmented by an incredible cocktail ingredients box from Shaker & Spoon.
This cocktail is meant to be mixed in the glass.
In a fancy double Old Fashioned Glass add a BIG clear ice cube.
Then add:
2 oz Papa’s Pilar Blonde Rum
1/2 oz Tamarind Syrup
2 dashes Angostura Bitters
1 Pinch Sea Salt Flakes
1 Sugar Cane Stick stirrer
Stir the drink. Enjoy!!

The Papa’s Pilar 7 Year Solera Blonde Rum is somewhat unique in the world of White or Silver Rums. Most are un-aged, industrial and without any significant flavor or character. Other than an alcoholic, astringent smell, rum does have a unique smell compared to other neutral (like vodka) spirits. But, even with that smell, the difference in most Silver rums is slight at best. The process that Papa’s Pilar employs to get the result they end up with, is quite different.

Papa’s Pilar Blonde combines aged rums from the Dominican Republic, Florida, Venezuela & Panama. The Solera process includes rum as old as the designated number (in this case 7 years) listed on the bottle. When rum is aged in wood, color is introduced naturally over time. It can either be virgin wood (usually oak), but very often the barrels are “used” former Bourbon or Sherry barrels. This offers unique flavor and character to distinguish the rum from others. To offer a “white or silver” rum from aged stock, filtering must be employed to achieve the crystal clear look. Darker rums are not as desirable in certain cocktails because it changes the look of them to the negative. Imagine, a brown Daiquiri? Not for me. But, there is a need for the flavor profile. So what to do?: Blend and filter.

Shaker & Spoon provided a wonderful gift box replete with provisions and recipes. “Kiss of the Oceans” is my first effort. For this drink I used:
