Caribeño

Caribeño - This super simple and straightforward cocktail is really at the heart of how rum was consumed “back in the day”. Martin Cate came up with this version. At its basest elements, this drink utilizes what people had in abundance, i.e. Rum, sugar and coconuts! Starting with an extremely available (got mine at Whole Foods @wholefoods) young Thai Coconut, the process is quite easy to shave the top and pry open a silver dollar sized hole in the top (safely I might add!). Please consult youtube.com as there are many tutorials online! Once opened, drain the fresh coconut water into a bowl and set aside. There! The hard part is done! I used the wonderful Coconut Cartel Rum from Guatemala. This rum was “Proofed” with Coconut Water to bring it to 40% ABV, and the end result is a very fresh, clean cocktail. Enjoy!
